Amfissa olives dark

Our dark Amfissa olives are hand picked with great care to avoid damaging the fruit. They are singled out by strict criteria, washed and placed in saline water in closed containers over a couple of months. During that process the olives are not notched so that their substances are retained.

The process of debittering and fermentation can take up to four months. During that period of time all important standard values are measured. So that we can offer a high quality product.

The debittered olives are singled out anew, washed and pickled in wine vinegar or marinated in different herbs and finally packaged. With this very gentle way of processing our olives retain their aroma and high nutritional value.

The very ripe olives are gently air dried in warm air, sprinkled with wine vinegar and sun flower oil and packaged. The olives processed that way develop an especially full and zesty flavor.

Packaged in PET containers, glass and vacuum bags.
