Our Kalamata olives are hand picked to avoid any damage to the fruit. They are singled out by strict criteria, washed and kept in closed containers in sea salt brine for debittering. The olives are not notched so that all their valuable substances are retained. The therefore necessary long period of fermentation is worth it, since the result is a delicious and healthy product.
After debittering the olives are singled out anew, washed, marinated in wine vinegar and packaged.
Packaged in PET containers, glas and vacuum bags.
